I like bananas (no doubts!).

However ironically, I’m often stuck in the same-old trouble: I buy a big bunch of bananas, intend to eat at least 2 per day to get a healthier me. But the matter is because I’m too absent minded to remember that plan, at the end, there are too many overripe bananas left and 100% I can’t eat them at once.

So, here’s my trick:

Banana Pancakes

Actually, I learnt this recipe when I visited my friends in Nashville. Luckily, the major ingredient required is overripe bananas. (Yeah!!!). These pancakes taste just like banana bread, but the way softer and fluffier thanks to the great combination of warm spices and pancake mix.

It’s also easy to prepare the ingredients as basically, three main things are overripe bananas, pecan and old-fashioned oats. Another good news: You needn’t get any blender or mixer at all. Just use a fork to smash all ingredients. Very convenient, right?

But to make this recipe more professional, I’ll share you my secret to make it tastier. Don’t miss out!

Ingredients

  • Overripe bananas, mashed (3)
  • Kroger chopped pecans (½ cup)
  • Kroger old-fashioned oats (½ cup)
  • Pumpkin pie spice (2 tsp)
  • Kroger buttermilk pancake mix (2 cups)
  • Buttermilk (2 cups)
  • Baking powder (2 tsp)
  • Large eggs (2)
  • Vanilla (1 tsp)
  • Maple syrup

How-to:

Add baking powder, pancake mix and pumpkin pie spice to a medium mixing bowl, whisk them up and stir in the oats.

In another bowl, add buttermilk, mashed bananas, vanilla and eggs. Again, whisk them up! After that, add the wet ingredients to the dry and start stirring to combine.

Now, a very common issue is the batter, it might get too thick and to deal with this, just add some more buttermilk. But remember to add just a little every time. The batter can’t be too loose, neither!

After getting a perfect batter, let it sit for roughly 7-10 minutes. Meanwhile, preheat the fry pan or the griddle.

If you use a griddle, don’t forget to add some cooking spray over 375 degrees Fahrenheit. Once it’s hot, transfer the pancake mixture into it. If you consider about how much is enough for the bite size, then roughly ¼ cup is okay.

Bake until the bottom side turns into light brown, flip the top down and repeat.

For better taste, you can add some maple syrup or any other sweetener and some berries or bananas.

Tips:

It’s nearly a must if you want your pancakes to get perfectly natural sweetness, go for overripe bananas. The darker their skin, the sweeter!

Besides, to add more volume to the fluffy and tall level of your pancakes, add some baking powder to the pancake mix as long as two large eggs. The result will amaze you!

Frozen Peanut Banana Cake

Now, I know another interesting way to eat these overripe bananas – freezing.

Many people will eat them raw. But I’ve got another more interesting way to eat them – making frozen peanut banana cake.

Ingredients:

  • Overripe bananas (but it’s okay if you use just ripe bananas)
  • Wooden skewers
  • Peanut (If you are allergic to peanut, use chopped pecan or other nuts instead)

How-to

Firstly, peel off all overripe bananas, smash them down, divide the mixture into patties which are as big as your fist.

Place all of them in a large plate or things like that with huge flat surface. Toss one skewer into each patty. Sprinkle with smashed peanut and place it in the freezer. After a couple of hours, once the banana patties are all frozen, pick the skewer and eat as a banana ice cream.

Banana Milkshake

Another interesting way to eat frozen overripe bananas is making milkshake. This recipe is very easy to prepare and to carry out. You can totally take advantage of handy ingredients in your kitchen like ice cream, milk, or cinnamon.

Speaking of its benefit for weight lost, turmeric helps a lot in fat burning and metabolism improvement. If you are a die-hard fan of this spice, add it in your tasty smoothie isn’t a bad idea at all.

Now, back to this milkshake recipe, all you need (apart from turmeric and frozen bananas) are grated ginger, lime juice, skimmed milk and any fruit juice you like. This last ingredient is just for flavor.

Protein-Packed Banana Bread

Next up is my secret – the protein-packed banana bread to be your perfect tasteful yet efficiently fat-burning breakfast.

You can believe in its total calorie – only 77. And fat – only 8g. For two slice every morning, you provide nearly 150 calories to your body with only 6 grams of sugar and 16 grams of fat. Compared to the similar sweet food, this is a major win!

Ingredients

  • Granulated stevia (6 grams)

Or you can use roughly ½ cup of coconut palm sugar as an alternation if you don’t have the granulated stevia in handy.

  • Pure vanilla extract (2 tsp)
  • Bananas (2)
  • Oat flour (¾ cup), gluten free if needed
  • Vanilla protein powder (¾ cup). Or you can use the whey or plant based to alter the vanilla protein powder
  • Baking soda (1 tsp)
  • Plain coconut yogurt or fat-free Plain Greek yogurt (1 cup)
  • Egg whites (⅓ cup)
  • Salt (¼ tsp)
  • Unsweetened applesauce (¼ cup)

How-to

Add bananas into a mixing bowl and mash them down until you get a smooth, thick pudding-like texture. Meanwhile, preheat an oven up to 375 degrees of Fahrenheit.

Now, add the other ingredients to the bowl and mix them up to combine. Then, divide this batter into two even parts.

Next, grease 2 small-sized loaf pans with parchment paper or coconut oil, transfer the batter in the pans, bake for roughly 25-35 minutes depending on whether you use which kind of yogurt. With coconut yogurt, 35 minutes. On the contrary, with Greek yogurt, 25 minutes.

To know whether it’s cooked or not, toss a toothpick into the middle of the bread, if it’s clean, then the dish is ready.

To gain weight

To gain weight, I highly recommend you to eat the brown bananas. However, I don’t know about you but I myself don’t like its taste a lot. If you’re the same as me, consult these three recipes:

Banana Oatmeal Chocolate Chip Cookies

  • Vanilla extract (2 tsp)
  • Banana (you can either choose 1 extra-large ripe banana or 2 small/medium ones then only mash about ½ heaping cup of them)
  • Old-fashioned whole rolled oats (1 1/2 cups)
  • All-purpose flour (1 1/4 cups)
  • Semi-sweet chocolate chips (1 1/4 cups)
  • Large egg (1)
  • Baking soda (1/2 tsp)
  • Light brown sugar, packed (1/2 cup)
  • Cinnamon (1/2 to 1 tsp) – add for flavor
  • Salt (1/4 tsp)
  • Unsalted butter, softened (1/4 cup)
  • Granulated sugar (1/4 cup)

How-to:

Use a stand mixer to combine bananas and eggs together. Then, add vanilla, butter, and sugars, beat them up in medium to high speed until you get a fine texture with small chunks of banana. 4 minutes are fine!

Now, add flour, baking soda, oats, cinnamon, and salt. Again, beat them up but on low speed within 1 minute.

Last up, add chocolate chips and beat them within 30 seconds to combine in low speed.

After that, use a ¼-cup measure and large-sized cookie scoop form roughly 14 equal-sized mounds of dough. To top with some chocolate chips, you can collection chips from the underside and top them.

Now, put the mounds on a huge tray or plate, use a plasticwrap to cover it and put in a refrigerator from 2 hours to 5 days because its texture is looser and wetter than usual dough, which is not suitable for baking until you freeze them up.

So, what’s going on if you still try to bake these un-frozen dough, chances are that they will be flatter, thinner and easier to spreading.

Okay, after refrigerator all doughs, preheat an oven to 350 degrees of Fahrenheit, line your baking sheet by spraying cooking spray or a Silpat. Put your doughs on. Remember not to place them too near to the other, the ideal distance is at least 2 inches. Bake them in 13 minutes until the tops and edges are set. Don’t overbake!

The baking time can be adjustable to fit the moisture content in your bananas, your oven variances and the climate. Just remember to bake them up until they are done, can be pale or a little bit undercooked in the middle. It’s okay!

After taking them out, let them aside in the baking sheet for 10 more minutes before serving. Avoid using a crack to cool them down!

Smoothie & milkshake

  1. Smoothie of banana milk and honey

Ingredients:

  • 10 almonds
  • 5 dessert dates
  • 5 raisins
  • 2 cups of cow’s milk
  • ½ cup of soy milk
  • 2 yellow bananas
  • Desired quanlity of cocoa powder and chocolates

How-to

Slice all raisins, bananas, dark chocolates and dates into pieces then transfer them into a mixing bowl, mix them up. Then, add honey, soy milk and cow’s milk and blend them up to combine.

Now, transfer the mixture into a glass, add some ice cubes or place in your refrigerator. It’s taster if being served cool.

If you keep drinking it continuously within 10 days, you will get clear result in gaining weight. Besides, it’s a positive gaining weight method, which helps to develop your immunity.

  1. Matcha Banana Milkshake:

Ingredients

  • 5 cashews
  • 5 almonds
  • 1 frozen banana
  • 5 cup of hot water
  • 1 tsp of honey
  • 1 tsp pf matcha
  • ½ tsp of vanilla extract

How-to

Soak buts in 30 minutes in the water cup then grind them with your frozen banana up until you receive a smooth texture paste. After that, use a food processor or a blender to mix them with a cup of water.

Serve in a glass.
